Buuz
From the outside, buuz resembles the traditional steamed buns of China. However, what makes this dish special is the filling made from mutton (sometimes beef), combined with onions and spices. Buuz is typically enjoyed with soy sauce and fresh chili, appearing during Mongolian New Year celebrations.View attachment 914 Buuz has many variations depending on the preparation of each region. Khorkhog
Although Khorkhog is traditionally called grilled meat, its preparation is quite similar to common stewed meat. People marinate mutton (which can be substituted with goat meat) with radishes, tomatoes, and herbs, then roast it in a clay pot with hot stones. The flavor of Khorkhog is a harmonious blend of delicious meat and fragrant herbs.View attachment 915 Khorkhog is usually served with bread and fresh vegetables. Photo: Tasteatlas
Suutei Tsai
Mongolia also has a very special milk tea that sometimes appears in important ceremonies and events. Black tea (or green tea) boiled is combined with milk, butter, and salt, creating a very unique taste that balances salty and sweet. The way to enjoy Suutei Tsai is also quite special, as diners should drink it slowly to have the best experience.View attachment 916 Suutei Tsai represents sharing and communication within the Mongolian community. Aaruul
This is a very popular dish in Mongolia. Fermented milk is allowed to solidify and is dried out. A special feature of Aaruul is that it has no expiration date, which of course only applies to the climate in Mongolia. Aaruul is dry and hard to the point of being difficult to chew, so people usually suck or nibble on it bit by bit. This fermented dish is very good for digestion and helps strengthen bones.View attachment 917 Aaruul is a nutritious snack that Mongolians really enjoy. Photo: Mongolia Guide
Airag
This is an important part of the culture and daily life of the Mongolian people. This "national drink" is made from pure fermented horse milk and contains little sugar. The fermentation time usually lasts for a week or longer, depending on the environment and weather. Airag has a moderately sour, refreshing, and incredibly appealing taste.View attachment 918 Airag is considered a nutritious drink with many health benefits. Photo: Discover Mongolia
